Though sterling silver does interact with caviar to create a slightly unpleasant taste, it’s myth that all metals taint the delicate fish eggs. Gold (an inert metal) or gold-plated spoons are fine, but for absolute purity—and elegance—you can’t beat a horn or mother-of-pearl caviar spoon. We also love the way the roe looks on the natural polished surfaces.
